This very special coppa is a beautiful cut from the neck of the pig, prized for its natural marbling and depth of flavour. We brine the cut in an Oloroso sherry brine, then smoke it over maple wood and hang it for three months.
The result is tender, aromatic and gently sweet — perfect for charcuterie boards, sandwiches or snacking straight from the fridge.

Allergens: None of the main allergens are used in the making of this product & all of our products are entirely free from gluten, lactose & nuts. The herbs & spices we use are packed in a plant that handles nuts, sesame, wheat, soya, gluten & mustard.
Shelf-life & storage: All of our sliced meats come vacuum-packed & have a 3 month shelf-life from when we slice & pack them. Our products are 'ambient stable' which means they do not need to be refrigerated. Store somewhere cool & out of direct sunlight. Once opened keep tightly wrapped & in an airtight container. Consume within 2 weeks.
